His love affair with Spanish food began with a seafood paella on a family holiday to the Costa del Sol. Little did Nick Hill realise that the kid from a council estate in Hull was opening the door to a new life as a chef-restaurateur.
His affection for Spain led to numerous family trips, a degree in Spanish studies and extensive travel over a period of years. All the while, he was learning about its culture and its food.
