His love affair with Spanish food began with a seafood paella on a family holiday to the Costa del Sol. Little did Nick Hill realise that the kid from a council estate in Hull was opening the door to a new life as a chef-restaurateur. 

His affection for Spain led to numerous family trips, a degree in Spanish studies and extensive travel over a period of years. All the while, he was learning about its culture and its food.

At The Hispanist, he has put those lessons into practice with dreamy food that would dazzle and delight aficionados in Spain. His food pays homage to Spanish flavours, capturing the essence of its cuisine, rather than replicating it dish-by-dish.
